Founded by partner Jing after years of travelling left her missing the food she grew up with, Nudo brings clean-lined Japanese design and a ramen-first menu to Spokane. Beyond the bowls there are yakitori skewers, gyoza, rice bowls and a full bar with a growing sake list, and vegan versions of most dishes are available on request. The Northside location adds sushi; downtown is ramen only.
